2017年1月11日晚8點,紅酒世界再次攜手亞洲首位葡萄酒大師李志延(Jeannie Cho Lee MW)爲葡萄酒愛好者獻上了2017年的第一場直播——發現納帕谷葡萄酒。本文爲大家呈現這場直播部分精選問題。 On 11th, January, 2017, Jeannie Cho Lee MW and launched a live broadcast on Napa Valley Wines. Here we present you some selected part of the questions and answers of the broadcast.

  1. 可以簡單介紹下納帕谷如今的釀酒趨勢嗎?

  答:10-15年前,納帕谷更加註重葡萄酒的集中度和濃郁度,釀造出來的葡萄酒展示出馥郁的成熟風味。如今納帕谷的釀酒師在釀酒過程中更加註重平衡。因此,人們開始更多地使用重力流法(取代水泵),更加溫和地讓葡萄在各個容器完成轉換,縮短浸皮時間,並且更多地採用天然釀酒方式(比如不使用成品酵母、不使用添加劑來提煉葡萄酒的風味和顏色等)。

  李志延原文:Winemaking is shifting towards a more balanced approach compared to 10-15 years ago where focus was on concentration, intense extraction and ripe fruit flavors. Thus some of the trends in winemaking is to use more gravity flow (versus pumping), gentle handling of the fruit, less intense maceration and more natural winemaking (no packaged yeast, additives that extract flavor or color, etc).

  2. 對於一個初到納帕谷的葡萄酒愛好者,有什麼特別值得一去的酒莊麼?

  答:納帕谷值得去的酒莊很多,我個人最喜歡的酒莊包括作品一號酒莊(Opus One Winery)、蒙大維酒莊(Robert Mondavi Winery)、柏里歐酒莊(Beaulieu Vineyard)、爐邊酒莊(Inglenook Estate)、佳慕酒莊(Caymus Vineyards)、蒙特萊那酒莊(Chateau Montelena Winery)、科裏森酒莊(Corison)、香桐酒莊(Domaine Chandon)、赫茲酒窖(Heitz Cellar)和紐頓酒莊(Newton Vineyard)。

  李志延原文:There are so many, but my favorites include Opus One, Mondavi, Beaulieu Vineyard, Inglenook, Caymus, Chateau Montelena, Corison, Chandon, Heitz, Newton.

  3. 納帕谷的葡萄酒爲何普遍價格較爲高昂?另外,您是如何定義膜拜酒(Cult Wines)的?

  答:納帕谷價格高昂主要是因爲這裏的土地地價高,此外勞動力的成本也很高。當然,這也是因爲供求關係的影響——市場上納帕谷優質葡萄酒供不應求(美國富人階層的需求量大)。膜拜酒是一種高級優質、最受人們追捧的加州(Californian)葡萄酒。其產量極少,每年產量僅爲幾千箱,有時候甚至更少。

  李志延原文:Napa is expensive because of the high cost of the land plus the expensive labor costs. Also it is supply and demand – supply is limited given the high demand from wealthy Americans for the best Napa wines. Cult wines are the super premium, most in demand Californian wines that are made in very small quantities, usually only several thousand cases per year or less.

  4. 對於納帕谷而言,2012和2013年份都是偉大年份,那麼這兩個年份納帕谷所出產的葡萄酒有何異同點呢?

  答:2012年份的納帕谷葡萄酒口感更豐富,質地華美;而2013年份則展示出更多的單寧特徵,結構佳,需要更多時間來綻放。兩個年份都很棒,擁有各自獨特的風格。

  李志延原文:2012 is more generous, sumptuous in texture while 2013 is more tannic and structured and will need more time to open up. Both are fantastic vintages with 2 different personalities.

  5. 納帕谷紅酒馬拉松(Napa Valley Marathon)將在三月舉行,您會參加嗎?您有參加過哪些有趣的關於紅酒的馬拉松呢?

  答:我想我不會參加三月的納帕谷紅酒馬拉松,因爲我並不擅長跑步。但我希望能夠去觀看這場賽事。

  李志延原文:I will not take part in the Napa marathon and I hope to take part mostly as a voyeur since I am a terrible runner.

  6. 您覺得納帕谷馬拉松對推廣其葡萄酒是否有所幫助?若有,會表現在哪些方面?

  答:馬拉松吸引了更多的人們去納帕谷,讓更多不同類型的遊客齊聚一堂。此外,對於參與者來說,馬拉松是親自體驗納帕谷美景的一個好機會,同時也可以參觀不同的納帕谷酒莊。

  李志延原文:The marathon brings people to Napa who may not normally visit so it expands the type and number of visitors. The marathon is also a good way to see how beautiful the landscape is in person and also visit many wineries at the same time.

  7. 同樣是赤霞珠(Cabernet Sauvignon),在釀酒工藝上,納帕谷葡萄酒與波爾多(Boedeaux)的葡萄酒有什麼不同?

  答:其實兩地的釀酒工藝很相似。比如浸皮技術和使用橡木桶熟化的方式幾乎相同——真正的不同在於混釀。波爾多的葡萄酒以混釀爲主,而納帕谷的葡萄酒較少採用混釀。

  李志延原文:Winemaking techniques pretty much remain the same in both regions. The maceration techniques, the aging in barrel are pretty much identical – the difference comes in the blending. Bordeaux wines are always blended whereas Napa wines are only sometime blended with other varieties.

  8. 我個人比較喜歡帶明顯花香的白葡萄酒,請問2014年石街酒莊長相思白葡萄酒(2014 Stonestreet Estate Vineyards Sauvignon Blanc)和2014年菲瑪修道院酒莊霞多麗白葡萄酒(2014 Freemark Abbey Winery Chardonnay)哪一款更適合我呢?

  答:我會建議你嘗試霞多麗——因爲長相思更多地展示出草本氣息而不是花香。雖然霞多麗也並非花香馥郁,但菲瑪修道院酒莊霞多麗白葡萄酒帶有誘人的桃子和杏子氣息,層次豐富,十分美味。

  李志延原文:I would suggest you try the Chardonnay – the Sauvignon Blanc is a bit herbaceous rather than floral and while the Chardonnay is not exactly floral, there are attractive peach and apricot notes on this wine to make it layered and delicious.

  9. 與其它地區相比,納帕谷的單一品種赤霞珠葡萄酒有什麼魅力?

  答:納帕谷的單一品種赤霞珠葡萄酒口感豐富圓潤,質地絲滑,單寧華美,架構緊緻。這樣的葡萄酒在年輕時已經誘人,同時還具有不錯的陳年潛力。

  李志延原文:Napa Cabs are generous, round, velvety in texture with sumptuous tannins and firm structure. This means the wines have aging potential as well as appeal as a young wine.

  10. 您認爲納帕谷的仙粉黛(Zinfandel)及其葡萄酒如何?

  答:納帕谷種植着十分優質的仙粉黛葡萄——在位於山坡的葡萄園中你會發現一些老藤仙粉黛。在納帕谷,超過100多家酒莊都會使用仙粉黛釀造葡萄酒,我個人喜歡的酒莊有蛙躍酒莊(Frog’s Leap)、戴利酒莊(Turley Wine Cellars)、黑駿馬酒莊(Black Stallion Winery)、佳慕酒莊、蒙特萊那酒莊、菲瑪修道院酒莊(Freemark Abbey Winery)、赫茲酒窖和銀朵酒莊(Silverado Vineyards)。

  李志延原文:There are excellent Zinfandels in Napa – look for hillside plantings where old vine Zin can be found. Zinfandel is made throughout Napa by around 100 different producers. Some of my favorites include Frog’s Leap, Turley, Black Stallion, Caymus, Montelena, Freemark Abbey, Heitz, Silverado.
